The main grape varieties of the Beaujolais appellations are Gamay and Chardonnay. The vines of this appellation are mostly planted on granitic, slightly clayey soils. The whole bunches of Gamay are vinified according to a specific method called Beaujolais vinification. The fermentation periods are relatively short but the maturing period of several months allows the wine to refine its structure while giving it remarkable aromatic notes.
