Chassagne-Montrachet is a beautiful village located south of Beaune, in the extension of Meursault and Puligny-Montrachet. The word Chassagne comes from the Latin "Cassanea": oak wood. The commune is world-famous for the quality of its white wines. It was called Chassagne-le-Haut until 1879 when the name was changed to refer to the most famous white wine in the world: Montrachet.
Vinification
Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.
Lightly toasted so-called blonde, 30% new barrels
