Located 18km south-east of Beaune, this village appellation is situated under the Château de Saint-Aubin, nestled in the hollow of a combe.

Dégustation : Our Saint-Aubin Village has a pale gold color. It reveals an elegant nose with citrus aromas. A powerful and fresh wine that reveals a saline mouth with subtle touches of wood and dried fruit, characteristic of its ageing in barrel.

Description

Located 18km south-east of Beaune, this village appellation is situated under the Château de Saint-Aubin, nestled in the hollow of a combe. This climate benefits from the colluviums at the bottom of the valley, which ensure significant drainage of the vineyard.

Vinification

Fermentation

Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.

Elevage12 months in 30% new French oak barrels, 10% of which are 500-litre barrels.
