The vines of the Premier Cru "La Comme" have a south-east exposure and produce grapes that reach perfect maturity. The name "La Comme" is the regional form of Combe, as the vineyard is an extension of the Combe de Saint-Aubin.

Dégustation : This powerful wine has a beautiful ruby colour. On the palate, it reveals aromas of small black fruits. The finish is long and fruity, with fine tannins.

Description

The vines of the Premier Cru "La Comme" have a south-east exposure and produce grapes that reach perfect maturity. The name "La Comme" is the regional form of Combe, as the vineyard is a continuation of the Combe de Saint-Aubin. The soil contains more gravel, marl and limestone which gives the grapes more structure and richness. The result is a more powerful wine. 

Vinification

Fermentation

The grapes are sorted, de-stemmed and gently transferred to the vat on a conveyor belt, without pumping. Before fermentation, we carry out a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which time the cap is punched down daily. The wine is then placed in vats and put into barrels, before undergoing full malolactic fermentation.irectly into barrels and the alcoholic and malolactic fermentations are carried out.
