The Montagny 1er Cru appellation is a white wine made from the Chardonnay grape. The Montagny 1er Cru are located in an intermediate zone and very often go up the hillside. The altitude of the vines varies between 240 and 385 metres. The vines are located in the commune of Montagny in an amphitheatre of hills. The slopes are clay-limestone with a tendency to limestone. The soils are light, shallow and rich in pebbles, which allows the Chardonnay to express all its power.
Vinification
The grapes are sorted and then de-stemmed, and transported to the vat with the help of belts, always with the aim of having a whole grape, not crushed. We proceed to a cold pre-fermentation maceration at 10°C for 4 to 5 days. During this phase, the aromas of the grapes and components such as anthocyanins are released. Then comes the fermentation during which we proceed to daily pigeage to extract the matter, the tannins. Vatting lasts between 18 and 20 days.
