DescriptionEstablished in Burgundy in Gallo-Roman times, the Mâconnais vineyards received a strong boost from the powerful abbeys of Cluny and Tournus. Cultivated on hillsides, the vines flourish on brown limestone and granite soils that are perfectly suited to Pinot Noir and Gamay. This environment gives the wine its structure, finesse and elegance.
Vinification
FermentationAfter the grapes are harvested at maturity, a sorting on a vibrating table is carried out on arrival at the winery. The vinification takes place in a thermo-regulated tank for a minimum of 12 days. The free-run and press juices are then blended and matured in vats, with the aim of preserving a bright fruitiness. Our vinification method allows us to reveal the beautiful phenolic and aromatic maturity of this vintage.
