Mâcon-Igé Lieu Dit "Château London"
The vines producing our "Château London" spread out in the setting sun, on its soil alternating marl and limestone, between 220 and 250 meters in altitude. This situation offers a good climatic compromise between southern influences and the coolness of the Mâconnais heights.
Situation géographique et terroir
The history of Igé is inseparable from that of the hamlet of Domange, whose original parish center is the church of Saint-Pierre, built around 953 by the monks of Cluny. The vineyards of the Mâcon-Igé appellation adjoin Azé to the north and Verzé to the south, where the landscape widens into a vast elongated basin. The subsoil here is made up of Upper Jurassic limestone. Vinification
Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put in vats directly, the alcoholic and malolactic fermentations, as well as the maturation, are carried out in vats and barrels.
