The Cyrot-Chaudron couple donated their vineyards to the Hospices de Beaune in 1979. The donation included several plots of very old vines which, in perfect condition and producing small harvests of fine grapes, have been preserved. These included vines in the commune of Pommard.

Dégustation : Our Pommard Cuvée Suzanne Chaudron reveals a perfect balance between freshness and tension. Its ruby colour gives off powerful aromas of black fruit. On the palate, it is full-bodied and well-structured, with a finish of candied red fruit. The power of this wine is unleashed on the palate and is characteristic of Pommards, a very fine vintage from the Hospices de Beaune.

When the Cyrot-Chaudron couple donated their vineyards to the Hospices de Beaune in 1979, the donation included several parcels of very old vines which, in perfect condition and producing small harvests of fine grapes, have been preserved. These included vines in the commune of Pommard.
40% of these vines predate 1959, with the oldest parcel dating back to 1910. More than a third of the Cuvée (35%) comes from vineyards on the limited-yield south-east slopes of Petits Noizons, which dominate the north of Pommard.

Vinification

Fermentation

The grapes are harvested by hand and placed in small crates to prevent the bunches from settling. For our red wines, the grapes are taken to the winery, passed through a sorting table and destemmed before being loaded into the vinification tank. Immediately, we proceed to a so-called “pre-fermentation cold maceration” which, by cooling the tank to 10°C, optimizes the extraction of the natural aromas of the grapes and oxygenates the musts. We favor long vatting times with daily punching down for 8 to 10 days to facilitate the extraction of tannins and colors. Finally, the final maceration lasts 3 to 5 days during which the must macerates gently at a controlled temperature to gain finesse and aroma.
