The Hospices de Beaune wine auction traditionally begins with the auction of this fine Cuvée. It is named after the nuns who cared for the sick from the time the Hospices was founded in 1443, some of whom even made substantial bequests to the institution. Originally from Saint-Omer in northern France, the nuns were trained at the Hospice de Valenciennes, on the border between France and Belgium.

 

Dégustation : This wine has an intense purple colour. The nose is floral and generous, opening onto a fruity palate with subtle tannins.

Description

The Hospices de Beaune wine auction traditionally begins with the auction of this fine Cuvée. It is named after the nuns who cared for the sick from the time the Hospices was founded in 1443, some of whom even made substantial bequests to the institution. Originally from Saint-Omer in northern France, the nuns were trained at the Hospice de Valenciennes, on the border between France and Belgium.

This cuvée is made from Bressandes, Teurons and Mignottes, climates as religiously chosen as the cuvée's name, in homage to the nuns of the same name who cared for the sick from the time the Hospices de Beaune was founded in 1443. While the Bressandes at the top of the slopes, with their light, marly soil, bring finesse, it is without doubt the Teurons, with their more rocky marl, that provide a dense, salty mid-palate. The Clos de la Mignotte, with its very old vines, supports all this with a full-bodied, tannic character. This is a wine that combines suppleness and robustness, a fine tribute to the Community of Sisters.

Vinification

FermentationThe grapes are harvested by hand and placed in small crates to prevent the bunches from settling. For our red wines, the grapes are taken to the winery, passed through a sorting table and destemmed before being loaded into the vinification tank. Immediately, we proceed to a so-called “pre-fermentation cold maceration” which, by cooling the tank to 10°C, optimizes the extraction of the natural aromas of the grapes and oxygenates the musts. We favor long vatting times with daily punching down for 8 to 10 days to facilitate the extraction of tannins and colors. Finally, the final maceration lasts 3 to 5 days during which the must macerates gently at a controlled temperature to gain finesse and aroma.
Elevage10 to 12 months in oak barrels
FûtsHospices wines are auctioned in new oak barrels, selected from a number of coopers in accordance with specifications defined by Ludivine Griveau, Hospices régisseuse.
