The “Clos de la Roche” climate is located in the village of Morey-Saint-Denis, which is one of the best-endowed villages. Indeed, this one is provided with five grand crus: Clos de la Roche, Clos des Lambrays, Clos Saint-Denis, Clos de Tart and Bonnes-Marres. It is located next to Gevrey-Chambertin at an altitude of between 250 and 300 metres and has a sunny exposure. This climate takes its name from the rocky base on which it rests.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed to the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels and the malolactic fermentation is carried out in full.
