The main grape varieties of the Beaujolais appellations are Gamay and Chardonnay. The "Moulin-à-Vent" appellation is one of the ten Beaujolais crus, named after the old windmill, a listed historical monument, located in the center of the vineyard.

The whole bunches of Gamay are vinified according to a specific method called Beaujolais vinification. The vatting time is relatively short and the wine is aged for several months to refine its structure and give it remarkable aromatic notes.
