Pinot noir Bottle - 75 cl

The village is located a few kilometers south of Meursault and north Pommard, high up on the thousand-year-old hillside overlooking the Route des Grands Crus facing the east.

Dégustation : Our Volnay has a nose of blackcurrant and blueberry with hints of toast. On the palate, fruity aromas emerge with finely expressed tannins.

Description

The village is located a few kilometers south of Meursault and north Pommard, high up on the thousand-year-old hillside overlooking the Route des Grands Crus facing the east. This vineyard has been cultivated for centuries, the Knights of Malta, the abbeys, the ducal and then royal domains harvested it well before the Revolution. Its typicality has been affirmed since the 18th century and still today: Volnay is an entirely red vineyard.

Vinification

Fermentation

The grapes are sorted, de-stemmed and then gently conveyed into the vat on a belt, without pumping. Before fermentation, we carry out a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels, and the malolactic fermentation is carried out in full.
