This Premier Cru "Santenots" marks the "North-South limit" between Pinot Noir and Chardonnay in this part of the Côte de Beaune. Indeed, this climate, on the border of two Villages, can be planted with either Chardonnay or Pinot Noir.

This Premier Cru "Santenots" marks the "North-South limit" between Pinot Noir and Chardonnay in this part of the Côte de Beaune. Indeed, this climate, on the border of two Villages, can be planted with either Chardonnay or Pinot Noir. Its great particularity is that it "changes village" according to its color: in white it is a Meursault, in red it is a Volnay. The structure of the soil is varied and allows the production of a red wine that is finer and more elegant than those produced higher up the hillside.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed into the vat on a conveyor belt, without pumping. Before fermentation, we carry out a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels and the malolactic fermentation is carried out in full.
