Situation géographique et terroir
The village is located a few kilometers south of Meursault and north Pommard, high up on the thousand-year-old hillside overlooking the Route des Grands Crus facing the east. This vineyard has been cultivated for centuries, the Knights of Malta, the abbeys, the ducal and then royal domains harvested it well before the Revolution. Its typicality has been affirmed since the 18th century and still today: Volnay is an entirely red vineyard. This Premier Cru “Chanlins” is located on the border of two villages: Volnay and Pommard under the name of “Chanlins-Bas” climate. Because of its presence on the edge of the Volnay appellation and in the Pommard appellation, this climate has characteristics of both appellations.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed to the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels and the malolactic fermentation is carried out in full.
Lightly toasted so-called blonde, 30% new barrels
