Situation géographique et terroir
The best parcels of Santenay are those to the north of the appellation alongside the vines of Chassagne-Montrachet. This village in the south of the Côte de Beaune is more than 80% planted with Pinot Noir and therefore produces mainly red wines. The soil contains more gravel, marl and limestone which gives the grapes greater structure and richness. The result is a more powerful wine.
Vinification
Immediately after harvesting, the grapes are pressed in whole bunches in a pneumatic press, and then the juice is statically settled for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.
Lightly toasted so-called blonde, 20% new barrels
