Situation géographique et terroir
Santenay is the last important vineyard of the Côte d’Or towards the South, it is neighboring Chassagne-Montrachet and produces mostly red wines. The “Passetemps” climate is adjacent to Clos des Mouches and Gravières. Its name comes from the difficulty of working the plot due to its steep slope and the geological composition of the soils, requiring a lot of time to work it.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed to the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels and the malolactic fermentation is carried out in full.
Lightly toasted so-called blonde, 30% new barrels
