Saint-Aubin 1er Cru "Les Combes au Sud" 2020

Located 18km south-east of Beaune, this village appellation is situated under the Château de Saint-Aubin, nestled in the hollow of a combe. This climate benefits from the colluviums at the bottom of the valley, which ensure a significant drainage of the vineyard.

Tasting : Our Saint-Aubin 1er Cru "Les Combes au Sud" has an attractive golden colour. It reveals a nose with a complex aromatic bouquet, with mineral and floral aromas at the beginning, followed by aromas of white fruit and lemon. It reveals an elegant and complex palate, where the olfactory aromas and a beautiful tension are found.

Description

Vinification

Fermentation

Immediately after the harvest, the grapes are pressed in their entirety in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.

Very good energy. There are aromatic parallels with the flavours of the previous wine (St Aubin 1er Cru Clos du Château) – sherbet energy – here backed with a modest oak component. More silky and mineral – hmm – another level of ripe but balanced concentration here. This flavour is delicious though with an ‘apple-y’ oxidative style and more visible oak – despite that, it’s an impressive finish. That’s a good wine, with very good energy too!
