Located 18km south-east of Beaune, this 1er cru is situated under the Château de Saint-Aubin, nestled in the hollow of a combe.

Dégustation : Our Saint-Aubin 1er Cru "Clos du Château" is a chiseled, tense and mineral wine. On the palate, it offers a profile very typical of the terroir, a balance between freshness and unctuousness with notes of dried fruit and candied citrus.

Description

Located 18km south-east of Beaune, this 1er cru is situated under the Château de Saint-Aubin, nestled in the hollow of a combe. This climate benefits from the colluviums at the bottom of the valley, which ensure significant drainage of the vineyard. The vines were planted in 1981 and 1999, facing south.

Vinification

Fermentation

Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.

The first impression on the nose is of caramelized tree fruit and flint, but this Saint-Aubin is still very young. On the palate all the elements we expect for this appellation are there, from the salty minerality to the restrained lemon and crisp pear fruit. Well-structured with excellent freshness for this warm vintage. Only at the long, stony finish do you feel the oak a bit, but these are early days for a wine made to age. Drinkable now, but best from 2024.

Lovely – complex, airy, citrus – a little lime in the mix too – such an inviting nose. Mouth-filling – a flavour that really expands over the palate – almost fizzing as it goes. Not quite the sherbet-style of Montagny but some comparisons. A finish that rolls over the palate as it slowly unwinds. My favourite so far and a wine that should get better and better in the cellar – excellent wine.
