Located 18km south-east of Beaune, this 1er cru is situated under the Château de Saint-Aubin, nestled in the hollow of a combe.

Dégustation : This wine has a greenish-gold color with bright reflections and a very salty, slightly toasted nose with lemon aromas. On the palate, this energetic wine reveals a beautiful balance and vanilla notes.

Description

Located 18km south-east of Beaune, this 1er cru is situated under the Château de Saint-Aubin, nestled in the hollow of a combe. This climate benefits from the colluviums at the bottom of the valley, which ensure significant drainage of the vineyard. The vines were planted in 1981 and 1999, facing south.

Vinification

Fermentation

Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.

A ripe and generous wine for this cool-climate appellation, with medium body that feels fuller, due to the considerable creaminess (from sur-lie maturation) on the palate. Plenty of ripe-pear character, plus touches of candied lemon, coconut and ground almonds. Long, chalky finish with crisp acidity and good freshness for the vintage. Drink now.
