The vineyard of Rully is located on the Côte Chalonnaise, more precisely between the appellations Bouzeron and Mercurey. The appellation produces white premiers crus capable of rivaling those of the best villages of the Côte. 

Dégustation : Our Rully 1er Cru Grésigny is a wine of great finesse with a beautiful substance. On the palate, its salinity is combined with aromas of flint and spices.
Accord Mets & Vins : Poultry & festive poultry (duck, guinea fowl, turkey), Grilled or roasted fish, Soft cheeses (Brie, Camembert, Comté...)

Description

The vineyard of Rully is located on the Côte Chalonnaise, more precisely between the appellations Bouzeron and Mercurey. The vines are planted here on gently sloping hillsides at an altitude of around 300 meters. The village is one of the most important cradles of Chardonnay in Burgundy. The appellation produces white premiers crus capable of rivaling those of the best villages of the Côte. Climate whose etymology goes back to the Gallo-Roman period. Indeed, its owner’s first name was Gracinius, which changed over time to Grésigny.

Vinification

Fermentation

Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.

Le vignoble le plus septentrional de la côte chalonnaise s’enracine en hauteur de coteaux sur des sols argilo-calcaires où les chardonnays vont chercher la fraicheur et la minéralité. Si ce Grésigny, l’un des 31 climats classés en 1er cru, n’échappe pas à la règle, il offre un surcroit de notes salines et toastées, ces dernières résultant d’un stage de 15 mois en fût. Il conviendra à des crustacés chauds ou un simple filet de sole accompagné d’un risotto d’asperges. (31,10€)
