The Mercurey appellation is part of the Côte Chalonnaise vineyards and is one of the most important wine appellations in Burgundy.  Indeed, it covers more than 400 hectares and was appreciated by Gabrielle d'Estrée, mistress of Henri IV. The Appellation owes its name to the god of commerce and messenger of the gods in Roman mythology, Mercury.

Dégustation : Our Mercurey seduces the eye with its limpid and pure yellow colour with silver reflections. On the palate, there are notes of brioche and toast, which mingle with spicy aromas such as vanilla brought by the ageing in cask.

Fermentation

After the harvest, the grapes are pressed and the must is settled. The vinification lasts about 3 to 4 weeks. The wine is then matured in oak barrels with 15% new barrels of new barrels for 6 months.
