The Mercurey appellation is part of the Côte Chalonnaise vineyards and is one of the most important wine appellations in Burgundy. Indeed, it covers more than 400 hectares and was appreciated by Gabrielle d'Estrée, mistress of Henri IV. The Appellation owes its name to the god of commerce and messenger of the gods in Roman mythology, Mercury.
Vinification
The grapes are sorted and then de-stemmed, and transported to the vat with the help of belts, always with the aim of having a whole grape, not crushed. We proceed to a cold pre-fermentation maceration at 10°C for 4 to 5 days. During this phase, the aromas of the grapes and components such as anthocyanins are released. Then comes the fermentation during which we proceed to daily pigeage to extract the matter, the tannins. The vatting lasts between 21 days in stainless steel tanks. We then proceed to a 15 month maturation in oak barrels with 20% new barrels with light toasting called blonde.
