The Maranges appellation, the last appellation of the Côte de Beaune, is located between the Côte de Beaune and the Côte Chalonnaise vineyards. Neighboring Santenay, it is similar to Santenay even if there are differences in terroir.
Situation géographique et terroir
The Maranges appellation, the last appellation of the Côte de Beaune, is located between the Côte de Beaune and the Côte Chalonnaise vineyards. Its 180-hectare vineyard is planted mainly, more than 90% with Pinot Noir. Neighboring Santenay, it is similar to Santenay even if there are differences in terroir. It even shares some of the same esteemed crus. The clay is in the majority, the Pinot Noir of the Maranges is characterized by chewiness and powerful tannins.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed to the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into barrels and the malolactic fermentation is carried out in full.
