Established in Burgundy since the Gallo-Roman period, the Mâconnais vineyards received a strong boost from the powerful abbeys of Clunny and Tournus. Cultivated on hillsides, the vines flourish on brown limestone and granite soils that are perfectly suited to Pinot Noir and Gamay. This environment gives the wine its structure, finesse and elegance.
Vinification
After the grapes have been harvested at maturity, they are sorted on a vibrating table when they arrive at the winery. The vinification takes place in a thermos-regulated tank for a minimum of 12 days. Thereafter, the malolactic and alcoholic fermentations, as well as maturation of the wine, are carefully carried out in vats and in our cellars in French oak barrels. Our vinification method allows us to reveal the beautiful phenolic and aromatic maturity of this vintage.
