Jean-Louis Peste practised medicine at the Hospices de Beaune for more than 30 years in the mid-19th century. In 1924, his daughter, Baroness de Baÿ, bequeathed a vast estate to the Hôtel-Dieu in memory of her father.
Dégustation :
This wine has a beautiful garnet-red colour. On the nose, it reveals intense aromas of red fruit with hints of spice. On the palate, the red fruit aromas are combined with black fruit and leather notes. This wine has great structure and length.

Facing south, south-west, on a gentle, draining slope, this climat looks southwards and extends Corton Charlemagne along the road leading to Pernand-Vergelesses. The clays are red, giving the Pinot Noir an assertive tannic structure. The many pebbles aerate the soil and certainly add finesse to the mid-palate. The Chardonnay expresses itself very well with the white cuvée of the same name. A wine for laying down, with a powerful texture when young.
Vinification
FermentationThe grapes are harvested by hand and placed in small crates to prevent the bunches from settling. For our red wines, the grapes are taken to the winery, passed through a sorting table and destemmed before being loaded into the vinification tank. Immediately, we proceed to a so-called “pre-fermentation cold maceration” which, by cooling the tank to 10°C, optimizes the extraction of the natural aromas of the grapes and oxygenates the musts. We favor long vatting times with daily punching down for 8 to 10 days to facilitate the extraction of tannins and colors. Finally, the final maceration lasts 3 to 5 days during which the must macerates gently at a controlled temperature to gain finesse and aroma.
Elevage10 to 12 months in oak barrels
FûtsHospices wines are auctioned in new oak barrels, selected from a number of coopers in accordance with specifications defined by Ludivine Griveau, Hospices régisseuse.
