Situation géographique et terroir
This vineyard is situated at an altitude of between 300 and 400 metres. The vines grow on the slopes of the valleys incising the Jurassic limestone plateaux to the west of the Côte-de-Nuits. The composition of the soil is identical to that of the Côte-de-Nuits, but the surface formations are very thin, or even non-existent. The clay-limestone soils result from the alteration of the limestone and marl of the substratum.
Vinification
Immediately after harvesting, the grapes are pressed in a pneumatic press, followed by static settling of the juice for 24 hours at 12°C. The musts are then placed in vats or barrels, where the alcoholic and malolactic fermentations take place. The wine is then matured on its lees, without racking (the alcoholic and malolactic fermentations are carried out in barrels and vats).
Light blond toast, 20% new barrels.
