Dégustation : This pale yellow wine reveals a nose of citrus and floral aromas. It is powerful and round on the palate, with subtle woody touches typical of its partial maturation in barrel. The finish is lively.

Description

The vineyards of the Hautes-Côtes de Beaune cover about 800 hectares spread over 30 communes. The terroir, in particular the climate, differs from the higher altitude of the vineyards, from 280 to 550 m, which leads to precise wines whose character is more and more sought after.

Vinification

Fermentation

The grapes are sorted, de-stemmed and then gently conveyed into the vat on a belt, without pumping. Before fermentation, we carry out a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into vats and put into barrels, and the malolactic fermentation is carried out in full.
