Gevrey-Chambertin 1er Cru
Gevrey Chambertin has 26 Premiers Crus "Climats", half of which are located to the south, and the other half to the north, on fairly rich clayey limestone soils.
Situation géographique et terroir
In the north of the Côte de Nuits, Gevrey Chambertin is a village with 26 "Climats" of Premiers Crus. A good half of these Premiers Crus are located to the south of the village below the Grands Crus du Chambertin, the other half are to the north, in the extension of the Combe de Lavaux, with fairly rich, clayey, limestone soils.
Vinification
The grapes are sorted, de-stemmed and then gently conveyed into the vat on a conveyor belt, without pumping. Before fermentation, we proceed to a cold maceration at 10°C for 4 to 5 days. Vatting lasts between 18 and 20 days, during which we punch down the cap daily. The wine is then put into vats and put into barrels, and the malolactic fermentation is carried out in full.
