Santenay "Comme Dessus" 2017
Santenay is the last important vineyard of the Côte d’Or towards the South, it is close to Chassagne-Montrachet and produces mostly red wines. The vines of “Comme Dessus” parcel have a southeast exposure and produce grapes that reach perfect maturity.

Santenay is the last important vineyard of the Côte d’Or towards the South, it is close to Chassagne-Montrachet and produces mostly red wines. The soil is rich in gravel, marl and limestone which gives a great value structure and aromatic richness to the grapes. The vines of “Comme Dessus” parcel have a southeast exposure and produce grapes that reach perfect maturity. The name “Comme” is the regional etymology of Combe, as the vineyard is an extension of the Combe de Saint-Aubin.
Vinification
Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.
