Situation géographique et terroir
Prosper Maufoux Crémant de Bourgogne is produced using the traditional method, in keeping with Burgundian winemaking traditions. It is made from Burgundy’s four iconic grape varieties: Chardonnay, Pinot Noir, Aligoté, and Gamay.
The grapes come from the clay-limestone terroirs characteristic of Burgundy, from vines approximately 25 years old that are harvested by hand. This origin and blend of grape varieties result in a Crémant that remains true to the typical style of Crémants de Bourgogne, combining finesse, freshness, and elegance.
Vinification
When we receive the grapes, we press them slowly using our pneumatic presses to respect the integrity of the berries. The first presses, which are richer and more complex, are selected to make the best basic wines in stainless steel vats. After filtration and clarification, our team of oenologists meticulously compose the blend.
A liqueur de tirage (a mixture of yeast and sugar) is added to the blended wines before bottling. Under the action of the yeast, carbon dioxide forms, giving rise to the foam and bubbles.
