Situation géographique et terroir
The plot of this Premier Cru "Les Chenevottes" dominates the strip of the hill occupied by the Grand Cru "Montrachet". The soil composition, exposure and orientation are common to both vineyards, making this Premier Cru extremely attractive to all those in search of hidden gems. "Les Chenevottes" is derived from the Old French word for "hemp", "cheneve", with the addition of the suffix -otte, which in Burgundy often marks the expression of affection. It was therefore probably, at the time the place was named, a field of hemp which adjoined the old village, which then extended as far as the neighboring parcel "Les Macherelles".
Vinification
Immediately after the harvest, the grapes are pressed in whole bunches in a pneumatic press, then we carry out a static settling of the juice for 24 hours at 12°C. The musts are then put directly into barrels and the alcoholic and malolactic fermentations are carried out.
Lightly toasted so-called blonde, 30% new barrels
