Situation géographique et terroir
The vineyards of the Hautes-Côtes de Beaune cover about 800 hectares spread over 30 communes. The terroir, in particular the climate, differs from the higher altitude of the vineyards, from 280 to 550 m, which leads to precise wines whose character is more and more sought after.
Vinification
Immediately after harvesting, the grapes are pressed in a pneumatic press, then we carry out static settling of the juice for 24 hours at 12°C. Part of the must is then placed in stainless steel vats, where alcoholic and malolactic fermentation will take place. The other part, approximately 30%, will be aged in French oak barrels.
