This gives it a freshness with round, greedy notes. With a highly floral nose, it releases aromas of acacia flowers and hints of yellow lemon.

Description
Bourgogne Aligoté is made from a selection of plots in the village of Bouzeron in the heart of the Côte Chalonnaise, where the finest Aligotés are planted. Aged in stainless steel vats, it retains all its freshness and develops a wide range of aromas.

Fermentation
Immediately after harvesting, the grapes are pressed in a pneumatic press, followed by static settling of the juice for 24 hours at 12°C. The musts are then placed in vats, and the alcoholic and malolactic fermentations and ageing are carried out in stainless steel vats.
