The Beaujolais vineyard, “one of the most sensual vineyards in France” according to the Revue de France, is over 50 kilometers long. The main grape varieties of the Beaujolais appellations are Gamay and Chardonnay. The “Moulin-à-Vent” appellation is one of the ten top-of-the-range Beaujolais crus. Its name comes from the old windmill, classified as a historical monument, and located in the center of the vineyard.
Vinification
The whole bunches of Gamay are vinified according to a specific method called Beaujolais vinification. The vatting time is relatively short, with strict temperature control, but the maturing period of several months allows the wine to refine its structure while giving it remarkable aromatic notes.
